It would be nice to be able to opt out of the rating system but still have a win/loss count

You can select non-rated games. You will still see your win/loss stats, but your rating will not change. Games that have 'R' in their description are unrated

unrated games will not be counted in your win/loss stats. I've tried it, and win/loss stats don't change. games must be rated for the win/loss in your profile to change.
